A Vegan Caesar Salad Recipe Even a Meat-Eater Will Love

This vegan caesar recipe will appeal to even your most carnivorous friends and family. The bonus? It’s high in protein and contains good fat your body needs.  A great replacement to the traditional caesar salad, whether you’re dieting or just a hungry vegan!

Vegan Caesar Dressing

  • 2 tablespoons of tahini
  • 1 lemon
  • 1 teaspoon djion mustard
  • 1 pinch of pink Himalyan salt
  • pepper
  • 2 garlic cloves
  • 1 tablespoon oil
  • 1/3 cup of sunflower seeds
  • 1/3 cup of water
  • 1 teaspooon soya sauce

Combine all ingredients in Magic Bullet (food processor or blender) and blend until smooth. Refrigerate before serving. Dressing will thicken in the fridge, so add more water until you reach desired consistency.

Crunchy tofu croutons

Tofu marinate

  • 1 teaspoon djion
  • 3 tablespoons of olive oil or coconut oil

Use a fork to stir and reach a paste like consistency.

Toss tofu cubes in marinate until coated. Sautee in frying pan over medium heat until crispy. Do not overcook – tofu is better when it is slightly moist.

Sautee any desired veggies with tofu, I recommend red or yellow peppers.

To serve: toss lettuce (or use kale for added nutrients) with caeser dressing (make sure to chill the dressing first!) and throw tofu croutons and veggies on top.

For on-the-go, mason jar meals are your friend. Simply layer your salad in the jar with the dressing on the bottom, then your crunchy tofu crutons, then add your peppers, the lettuce and finally, nutritional yeast on the top. Dump contents out into a bowl for easy tossing. Lunch has never looked better.
